Eggplant peel flour in bread: physico-chemical and sensorial analysis among children

Objective: To describe the physico-chemical and sensorial analysis of bread type bisnaguinha made with different levels of eggplant peel flour (EPF) among children.
Materials and Methods: It is a cross-sectional study in which 5 formulations of bread were created and analyzed: F1 (standard – 0% EPF) and the others added 7% (F2); 14% (F3); 21% (F4) and 28% (F5) of EPF. Seventy untested judges of both sexes, aged between 7 and 10 years, participated of the sensory evaluation. For the sensorial analysis (attributes) a mixed hedonic structured facial scale of 7 points was used. For global acceptance and purchase intention a mixed structured scale of 5 points was used. The levels of moisture, ashes, proteins and lipids were analyzed in the laboratory. The carbohydrate, calories and crude fiber contents were evaluated theoretically.
Results: The lowest values (p<0.05) were found for F5 in appearance (4.46), aroma (3.91), flavor (4.30), texture (3.90), color (3.92), global acceptance (3.15) and purchase intention (3.33), with no statistical difference from the other samples. The F4 sample was the one with the highest EPF content and sensory acceptability similar to the standard product in all evaluated characteristics. Higher moisture contents (31.63 g.100 g-1), ashes (1.22 g.100 g-1) and fibers (0.50 g.100 g-1) and lower carbohydrates (50.49 g.100 g-1) and calories (313.25kcal.100 g-1) were checked for F4. There was no statistical difference (p>0.05) for protein and lipid contents between F1 formulations (7.56 g.100 g-1 and 9.22 g.100 g-1, respectively) and F4 (7.49 g.100 g-1 and 9.17 g.100 g-1, respectively).
Conclusion: A level of addition up to 21% of EPF in bread type bisnaguinha was well accepted by children, obtaining similar sensorial acceptance to the standard product, improvement of the nutritional profile and good marketing expectations.
