Evaluation of the perception of portion sizes of protein foods

Introduction: Quantitative assessment of protein consumption using instruments such as the 24-hour recall and dietary record may be underestimated or overestimated due to failures in estimating the portion sizes of protein foods. Objective: To evaluate the perception of the size of the portions of protein foods. Materials and Methods: The sample consisted of 50 college students who estimated the portion sizes of the following protein foods: grilled beef steak, beef cooked in chunks, braised beef, grilled chicken breast fillet and boiled chicken. Food was arranged in individual booths. In each booth was placed a medium portion (100 g) of the food in a shallow dish. Results: The percentage of subjects who indicated the exact size of the (average) portions ranged from 52.0 to 66.0%. The estimate of the average portion size in grams was overestimated for all foods, especially for bovine steak (174.5 g). Conclusion: The results showed that most of the subjects estimated correctly the size of the portions of protein foods categorized as small, medium and large, but the percentage of subjects that estimated wrongly was also high, possibly affecting the quality of the data on protein consumption.
