Relações interorganizacionais no desenvolvimento de produtos inovadores: o caso dos alimentos funcionais

Resumo

Na indústria alimentícia, a inovação surge do desenvolvimento de novos produtos e constitui uma importante fonte de diferenciação e agregação de valor. O alimento funcional (AF) é considerado uma inovação. O objetivo deste estudo é descrever as relações interorganizacionais existentes na cadeia de AF. Para atingir o objetivo dessa investigação, foram conduzidas entrevistas semiestruturadas de natureza qualitativa. Foi identificado alto nível de interações organizacionais para o desenvolvimento de novos produtos. A compreensão da estruturação das relações interorganizacionais deve ser tratada como importante para o desenvolvimento de AF, pois pode auxiliar o setor de alimentos a agregar valor e ganhar mercado.
